About Kawashiri Shuzo
One of the oldest breweries on Takayama’s historic Ichinomachi street. Known for koshu (aged sake) as well as classic Hida-style junmai. Traditional wooden kura maintains ideal temperature for slow fermentation in the cold Hida winters.
