Chiyokotobuki Toraya

Name combines longevity (chiyokotobuki) and the tiger shop (toraya). Located in Sagae, a cherry-growing town. Uses the cold climate of inland Yamagata for slow natural fermentation. Traditional craft approach with small-batch production.

Kojima Shuzo (Koro)

Small artisanal brewery in the rural Nagai area. Known for traditional hand-crafted approach. Produces limited quantities with emphasis on quality over volume.

Suzusei Shuzo (Hidakami)

Located in Obanazawa, famous for its silver mines and Hanagasa Festival. Small production focused on local market. Obanazawa’s cold winters provide ideal brewing conditions.

Takahata Winery

Primarily a winery but also produces sake. Takahata region known for grape and fruit cultivation. One of few combined wine and sake producers in Tohoku. Tourist-oriented facility with restaurant.

Kudoki Jozu (Kamenoi Shuzo)

Name means master of seduction. One of Yamagata’s most popular and sought-after brands. Known for elegant fruity aromatics and silky texture. Uses a wide range of premium rice varieties to showcase different expressions.

Yonetsuru Shuzo

Name means rice crane. Over 300 years of history. One of the earliest breweries to revive the heritage rice variety Kamenoo. Located in Takahata, a wine and fruit-growing region of Yamagata.

Nishida Shuzoten (Denshu)

One of Japan’s most cult-status sakes alongside Juyondai. Name means rice field sake emphasizing rice as sole ingredient. Extremely difficult to buy at retail. Tiny production.

Suehiro Sake Brewery

Located in historic samurai town of Aizu-Wakamatsu. Among the first to adopt yamahai method. Beautiful Meiji-era buildings.

Nanbu Bijin

Won IWC Champion Sake trophy. Pioneered sugar-free umeshu recognized by the EU. Name means Southern Beauty. Located in heartland of Nanbu toji guild.
