Tamagawa Jozo (Tokamachi)

A small Tokamachi brewery not to be confused with the Tamagawa brand from Kyoto (Kinoshita Shuzo). Produces local-market sake primarily consumed in the Tokamachi area.

Aoki Shuzo (Tsumari)

Historic brewery in the Tsunan/Tsumari area distinct from the Aoki Shuzo that makes Kakurei. One of the older breweries in the heavy-snowfall Nakauonuma district.

Yashiro Shuzo

Small Joetsu-area brewery in the Kakizaki district. Traditional Echigo-style brewing focused on clean dry sake. Produces limited quantities for the local market.

Endo Shuzo

Located in the historic Takada castle town area of Joetsu. Small artisanal production with emphasis on the clean Niigata tanrei karakuchi style.

Ayumasamune Shuzo

Named after the sweetfish (ayu) found in local rivers. Located at the foot of Mt. Myoko with access to pristine mountain spring water. Known for gentle elegant sake.

Chiyono Hikari Shuzo

Located in the heavy-snowfall Myoko region. The name means ‘Light of a Thousand Generations’. Natural cold climate provides ideal low-temperature fermentation conditions during winter brewing season.

Kunimune Shuzo

One of several breweries in the Myoko area benefiting from heavy snowfall and pristine mountain water. Known for reviving traditional yamahai and kimoto methods alongside modern clean styles.

Tanaka Shuzo (Norin)

Small family brewery on the Kubiki Plain of Joetsu. Distinct from other Tanaka Shuzo breweries. Focused on traditional local sake production for the surrounding community.

Takeda Shuzo (Joetsu)

Small Joetsu-area brewery maintaining traditional Echigo brewing methods. Caters primarily to local restaurants and retailers in the Joetsu region.

Tsunan Jozo

One of Japan’s newest sake breweries. Located in the heavy-snowfall Tsunan area at 400m elevation. Uses the natural cold environment and abundant snow for sake production and storage. Third-sector enterprise supported by the local municipality.
