Katafune means One-Sail Boat evoking a solitary vessel on the Sea of Japan. Located in the Joetsu area of southern Niigata. Known for gentle round sake with a clean finish. Small artisanal production focused on quality over volume.

Located in Tsubame city known for its metalworking industry. Kinshihai references the golden shachi (dolphin-fish ornament) found atop Japanese castles. Small traditional brewery maintaining classic Echigo brewing methods.

Kimi no I means Lord’s Well. Located at the base of Mt. Myoko a famous ski resort area. One of the few Niigata breweries actively producing yamahai style sake alongside the typical tanrei karakuchi style. The heavy snowfall of Myoko provides exceptional water.

Fukugao means Happy Face. Located in Sanjo the famous metalworking and cutlery city. Known for innovative whisky-barrel aged sake. The cask-finishing technique imparts vanilla and oak notes creating a unique crossover between sake and whisky worlds.

Not to be confused with the much larger Ozeki Corporation in Hyogo. This is a small independent Niigata local brewery in Gosen city. Maintains traditional small-batch Echigo brewing methods.

Formed in 1945 by merging 14 small breweries in the Murakami area. Mutsuboroshi (Six Stars) is the flagship brand. Located in Murakami alongside Miyao Shuzo. The Murakami region in northern Niigata provides excellent rice and water.

Credited as the single most influential brewery in establishing the tanrei karakuchi (light dry) Niigata style in the 1970s-80s. Koshi no Kanbai sparked the jizake boom that revolutionized premium sake across Japan. Extremely difficult to obtain.

Jozen Mizunogotoshi means As Smooth as Water. Located in the heavy-snow ski resort town of Yuzawa. Uses ultra-soft snowmelt water. Jozen White label became a gateway sake for new drinkers worldwide. The brand name references a Zen philosophy ideal.

Shimeharitsuru means Sacred Rope Crane. Located in the castle town of Murakami in northern Niigata famous for salmon culture. Known for elegant refined style. Murakami has a centuries-old tradition of salmon preservation (shiobiki-zake).

Founded 2007 by maverick brewer Yujin Yusa who left a larger operation to start fresh. Produces only ginjo grade and above. Known for innovative sparkling sake. Uses rice polished in-house for full quality control.
